Arugula (Rocket) Salad

This simple salad is full of flavour and will be sure to please everyone at your table!


  • 5 oz. fresh arugula
  • 1 carrot, thinly peeled or sliced
  • 1 baby cucumber
  • 6 cherry tomatoes
  • 5 radishes sliced (optional)
  • ¼ cup of Parthena Extra Virgin Olive Oil
  • 4 tbsp Parthena Traditional Balsamic Vinegar
  • Parthena Mediterranean Sea Salt and fresh ground pepper to taste
  • Shaved parmesan cheese ribbons for garnish


Combine the arugula, carrots, radishes, cucumber, and tomatoes in a large salad bowl. Add the oil and balsamic vinegar and toss until moistened. Add sea salt and pepper to taste. Serve salad cold on a large platter and garnish with ribbons of parmesan cheese.
