This simple salad is full of flavour and will be sure to please everyone at your table!
- 5 oz. fresh arugula
- 1 carrot, thinly peeled or sliced
- 1 baby cucumber
- 6 cherry tomatoes
- 5 radishes sliced (optional)
- ¼ cup of Parthena Extra Virgin Olive Oil
- 4 tbsp Parthena Traditional Balsamic Vinegar
- Parthena Mediterranean Sea Salt and fresh ground pepper to taste
- Shaved parmesan cheese ribbons for garnish
Combine the arugula, carrots, radishes, cucumber, and tomatoes in a large salad bowl. Add the oil and balsamic vinegar and toss until moistened. Add sea salt and pepper to taste. Serve salad cold on a large platter and garnish with ribbons of parmesan cheese.
