Try this devine combination of sweet, smoky and tender grilled zucchini with feta cheese and fresh lemon. Make this in summer when zucchini is very plentiful.
- 1 tbsp. lemon juice,
- 3 zucchini
- Pinch of sugar
- 4 oz feta cheese, crumbled
- 4 tbsp. olive oil, extra for bushing
- salt and ground black pepper
- 2 tsp. chopped fresh mint
Whisk together the lemon juice, sugar, olive oil and mint. Set aside.
Preheat grill. Slice the zucchini on the diagonal into ¼ inch thick slices. Brush with oil, then place on the grill and cook for about 4 minutes on each side, until tender and well browned in places.
Arrange the zucchini on four plates, sprinkle with the feta, and drizzle with dressing. Season with salt and pepper to your taste. Serve immediately.
