Try this divine combination of sweet, smoky, and tender grilled zucchini with feta cheese and fresh lemon. This dish is perfect in the summer when zucchini is plentiful. Use young, tender zucchini for the best taste.
- 1 tbsp. lemon juice,
- 3 young zucchini, 6-7 inches long.
- Pinch of sugar
- 4 oz feta cheese, crumbled
- 4 tbsp Parthena Extra Virgin Olive Oil, extra for bushing
- Parthena Mediterranean Sea Salt and fresh ground black pepper to taste
- 2 tsp chopped fresh mint
Whisk together the lemon juice, sugar, olive oil and mint. Set aside.
Preheat grill. Slice the zucchini on the diagonal into ¼ inch thick slices. Brush with oil, then place on the grill and cook for about 4 minutes on each side until tender and well browned in places.
Remove from grill and sprinkle with the feta and drizzle with the dressing. Season with Parthena Mediterranean Sea Salt and pepper to taste. Serve immediately.
